Wurzig Salad

ingredients
- 1 cup oil
- 3⁄4 cup sugar
- 1⁄3 cup ketchup
- 1⁄4 cup vinegar
- 1 tablespoon Worcestershire sauce
- 1 medium onion, grated (1/4 cup)
- grated sharp cheddar cheese (optional)
- 1 (10 ounce) bag fresh spinach
- 3 hard-boiled eggs, sliced
- 1⁄2 small white onion, minced
- 1⁄2 cup sliced mushrooms
- 3 -6 ounces bacon, cooked and crumbled
- 2 fresh tomatoes, rough chopped
directions
- Whisk together oil, sugar, ketchup, vinegar, worchester, grated onion and cheese. Can sit in refrigerator overnight to blend the flavors.
- Toss spinach with eggs, minced onion, sliced mushrooms, bacon and tomatoes.
- Pour dressing over and mix salad.

Had to try this recipe, simply because the name is fun to say, but boy, am I glad I did! This was the highest rated recipe we've had in a long time, from the entire family. DH had 3 helpings before he even touched the main dish and he doesn't eat salads! DS (18) loved everything about it and DD (5) loved mostly the eggs and bacon, but still ate a few pieces of spinach. The last comment I heard was, "I could LIVE off this salad!" I've already promised to make it again, which is more than fine with me! The bacon and eggs are a must, the dressing is tangy and sweet and these all combine to disguise the spinach for the spinach-haters. I could go on and on.... it's THAT good! I did have to deviate slightly from the salad ingredients. I ran out of white onion with the other recipe I was making, so I used some red onion I had on hand, but I don't think that made any difference other than color. And I had to skip the mushrooms, as the ones I had didn't look pretty enough to be eaten raw and I could see this recipe was going to be beautiful on the plate.
