Whole Grain Blueberry Muffins

ingredients
- 1⁄2 cup oat bran
- 1 cup old fashioned oats
- 1 cup whole wheat pastry flour
- 2 teaspoons baking powder
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon cinnamon
- 1⁄4 cup sorghum or 1/4 cup molasses
- 1⁄4 cup egg substitute or 1 whole egg
- 1 cup buttermilk
- 1⁄4 cup oil
- 1 1⁄2 cups blueberries, washed
directions
- Preheat oven to 400 degrees.
- Place the oats in blender container and process until fine flour.
- In a medium bowl, thoroughly mix oat flour, oat bran and pastry flour; stir in baking powder and soda.
- In a separate bowl, mix together the egg substitute, buttermilk and oil.
- Add the wet ingredients to the flour all at once and stir to moisten.
- Gently stir in rinsed and drained berries and spoon batter into muffin tins that have been sprayed with non-stick cooking spray.
- Bake in preheated oven for 25 minutes or until lightly brown.

I have made this recipe my personal project...I am on a "clean eating" diet and these muffins have really helped me out. They were great as is, but I have tried to add to them by adding 1/4 cup flax seed ground in coffee grinder, 1/2 cup of unsweetened applesauce to keep them moist, 30 drops of Stevia natural sweetner, and nuts of your choice. They are a very healthy alternative to normal breads. Highly recommended!

Delicious and healthy and a great way to use blueberries along with a great way to use up the last of the buttermilk. I made a few minor changes to the recipe by not using oat bran (couldn't find it) and using oat flour in its place. I also skipped the cinnamon (out of) and instead of the molasses (out of) used honey in its place. I sprinkled nutmeg and sugar over the tops of the muffins -- and got 15 muffins out of the recipe--the three of us ate every one! A great breakfast for Father's Day or any summer Sunday! Thanks for sharing!

I came to this site in March of 2004. It was then called Recipezaar. This site was the first on-line site that I ever joined. I first popped in 2003 while searching for a Peach Cobbler Recipe. In March of 2004, DH was having shoulder surgery and I was looking for a Split Pea Soup. Once again I found myself on Zaar as it came to be called.
Over the years I hung out and learned from some of the best home cooks in the country, I posted over 700 recipes on the site, reviewed over 3500 recipes and posted over 3000 food photos. Over the next 10 years the site made many changes and in 2010 it was sold to to Food Network and became Food.com.
Until last year we played games, talked and shared with one another. As a result of the community and the relationships I built I got to meet some wonderful people from all over the country. I also have a great number of friends that I have never meet face to face. Some of us still hang out at various places across the net.
Zaar was more than a cooking community. It was an internet community of friendship. Life is an adventure ever changing.
