  • Heat oil in a medium nonstick skillet over medium high heat.
  • Add onion, green pepper, and garlic, stirring frequently until soft. about 8 minutes.
  • Add Cajun seasoning, chili powder and cumin. Cook 1 minute.
  • Add rice and stir constantly until grains are coated, about 1 minute.
  • Add tomatoes and water; bring to a boil.
  • Reduce heat and simmer, covered, for 15 minutes.
  • Add chicken and olives; cook covered, until rice is tender and chicken is heated, about 5 more minutes.

  1. This definitely had some kick but needed salt and maybe something else. If I made it again, I might add corn and black beans. I just needed something more I guess. I cooked the brown rice seperate as others had suggested. My husband did enjoy this, although he poured hot sauce on it, also.
     
  2. This had good flavor and was spicy. I doubled all the spices. Also used instant brown rice as the reviewers had suggested. I would probably cut the water in half if I was to make this again, because it seemed really soupy.
     
  3. Great recipe! One correction, brown rice takes 45 minutes to cook. White rice is the one that only takes 15. No need to cook the brown rice separately as long as you adjust the cooking time in the skillet. 5 stars for taste, 4 stars because I had to adjust the cooking time from the instructions.
     
  4. The brown rice was cooked separatley for 45 minutes and one chicken breast was sauteed in the pan next to the partially sauteed onions, bell peppers and seasonings. I then removed the breast, chopped it and added it back to the pan with the tomatoes, olives and some artichokes I had on hand. Dh says it was very satisfying and he was surprised it was a WW recipe. Definitely not bland. I loved its ease.
     
  5. I tried this and the spicy taste was very good. I used instant brown rice since I had read other comments before making it. I did not have stewed tomatoes and used a can of tomato sauce...but that did not hamper the taste...I do know the stewed tomatos might have made it a little sweeter...but I forgot to add a drop of sweetner to see. My husband and I both liked it and I will make it again. Sorry..I hate when people change eveything around in your recipe and then rate it...but it's good even if I made a slight change. :) Joyce

I have always enjoyed cooking and looking for recipes. I have to admit though, until I joined Weight Watchers four years ago I never did much cooking. Since then it has became vital to do my own cooking and I find I am really good at it. I really enjoy trying new ingredients like Quinoa, Millet, Porktenderloin, hoisin sauce, beans, Textured Vegetable Protein among many other new ingredients. My family has started thinking I am a little weird with all the unusual ingredients I have in my pantry. My passions are my 3 nephews, Matthew, Lucas and Charles and my 8 parrots, Guy, Pete, Toby, Daisy, Zeke, Ernie, Max and Lu. They keep me positive when life takes a nose dive.
