ingredients
- 1 cup onion, chopped
- 2 garlic cloves, chopped
- 3 green onions, chopped
- 2 (12 ounce) cans diced tomatoes
- 4 cups low-fat chicken broth
- 1⁄3 cup salsa
- 1⁄2 red pepper, chopped
- 1⁄2 green pepper, chopped
- 3 -4 celery ribs, chopped
- 1⁄3 cup fresh cilantro
- 1⁄2 teaspoon cumin
- 1⁄2 teaspoon chili powder
- 1⁄2 teaspoon basil
- 4 tablespoons fat free sour cream
- 4 tablespoons flour, to thicken (I only use 1 because I don't like thick soup)
directions
- Simmer onions, garlic & green onions in a pan until tender. Put all ingredients in a pot, simmer until all veggies are tender.
- **** You can add chicken, divide the points by 9 servings. Taste great with a couple toasted taco shells on the side, but count your points -- .

Very good tortilla soup flavor without the tortillas or chicken! I used Chi-Chi's Original Medium Salsa, which gave it a nice kick. I realized halfway through sauteeing the onions that I didn't have any celery, so I used a zucchini I had floating around in the fridge instead, and it worked out beautifully. Also, I used 2 tablespoons of cornstarch instead of flour and while it thickened it somewhat, it didn't become super-thick, which was nice.

Years ago when I was in college my parents used to make this for me when I came home. It was the best soup by far. I was so glad to find the recipe on here years later. Hands down...this soup recipe is "AMAZING". I cook the whole thing in the crockpot. I use rotel instead of the diced tomatoes and half of a jalapeno to give it a nice kick. Personally, I think the soup needs a little flour (2 or 3 tbls). It doesn't make it thick, but instead gives it a nicer consistancy. Also, I cut up a rotesseri chicken from the grocery and put it in the crock pot with the other ingredients. A+++++ tortilla soup!!!
