- 1 clove garlic, crushed
- 2.46 ml salt
- 59.14 ml rice wine vinegar
- 4.92 ml sugar
- 118.29 ml carrot, peeled and grated
- 78.78 ml thinly sliced white onion
- 29.58-14.79 ml jalapeno chile, finely chopped
- 16 inch baguette
- 19.71 ml low-fat mayonnaise
- 340.19 g boneless skinless chicken breasts, cooked or 340.19 g pork tenderloin
- 14.79 ml fresh lime juice
- 2.46 ml five-spice powder
- 118.29 ml fresh cilantro
directions
- With chef's knife, mash garlic and salt into a paste.
- Transfer to a mixing bowl and add vinegar and sugar, stirring to dissolve.
- Add carrots, onions and chilies.
- Toss to coat, set aside.
- Slice baguette into 4 equal lengths.
- Split each piece horizontally.
- Spread cut sides with mayonnaise.
- Arrange the meat on the 4 bottom halves.
- Sprinkle with lime juice and 5-spice powder.
- Top with the carrot salad and a shower of cilantro leaves.
- Cover with bread tops.

Loved this sandwich, it so captures the best of Vietnamese flavors. I used a store bought roasted chicken and also cut back on the jalapeno to half. Bought bulk 5 spice powder at the grocery store so it on cost 16 cents for about 3 tablespoons. This one is going in the favorites file. Thanks Dancer!
