Veggie Loaded Tuna Salad

ingredients
- 1 (6 ounce) can tuna in water, drained & flaked
- 1⁄2 cup sweet bell pepper, finely chopped (red, orange, yellow, or any combination)
- 1⁄4 cup carrot, finely chopped
- 1⁄4 cup celery, finely chopped
- 1⁄3 cup fat-free mayonnaise
- 2 teaspoons honey mustard
- 1 teaspoon sweet relish
- 1 dash salt
- 1 dash pepper

- additional salt and pepper
directions
- Combine mayo, honey mustard, relish, s alt and pepper, and mix well. Then stir the tuna into this mixture. Finally, fold in all the veggies. If you like, season to taste with some more salt and pepper. Mmmmmm!

This was an interesting way to make tuna salad different than my usual boiled egg, relish, mayo, celery route. I used yellow pepper which was good, but next time I will use a bit less due to our person tastes. I might also bump up the honey mustard, but all in all, a tasty low calorie lunch treat. Made for Spring 2010 PAC

<p>I will start by saying that I love to cook and also love collecting recipes so I am very happy to have joined Recipezaar and really enjoy going through all the recipes that have been generously posted by other members. <br /> <br />I only cook for myself during the week but on weekends I usually have 2 meals to prepare for family and friends. I am on WW and try to keep my choices in line with WW but will indulge myself and save a few recipes that don't fit in with WW for special occasions. My favourite food is curry and am always on the look out for a new curry <br />recipe. <br /> <br />I love to garden as my Zaar name would indicate, I grow tomotoes and herbs but space is limited so mostly I have perennial and annual flowers and plants. <br /> <br />My baby is a lovely little ShihTzu X Poodle named Rosie, she is my only child so of course is spoiled rotten.
