  • 1. Cook onions, garlic, chili powders, curry powder, and cayenne pepper in olive oil for about 5 minutes or until onions are soft.
  • 2. Add carrots and 1 can of vegetable broth. Bring to boil and reduce heat. Let simmer for about 10 minutes to soften carrots.
  • 3. Add can of diced tomatoes, corn, black beans, red beans, and remaining vegetable broth. Bring to boil and reduce heat. Cover and let simmer for 30 minutes.
