Vegetable Hamburger Soup / Stew

Is it a stew or soup? You decide. This is delicious & healthy and easy to make and tastes even better the next day. I use low-salt canned vegetables whenever possible. You can change out some of the ingredients to suit your family�s taste and what is on sale. This is my recipe inspired by Hamburger Stew by Chef #381241. A great way to s-t-r-e-t-c-h your budget!

I used ground beef and beef broth instead of the water. I also didn't add the kidney beans and used potatoes. I enjoyed this. The longer it sat the better it tasted.

  1. In a very large pot, brown meat of your choice and garlic over medium heat.
  2. Drain off grease and return meat to the pot.
  3. Add remaining ingredients.
  4. Stir to combine.
  5. Over medium-high heat bring to a slight boil; reduce heat to low; cover.
  6. Continue simmering, stirring occasionally for 30 minutes or until pasta is cooked.
