- 1 lb turkey mincemeat
- 1 large onion, chopped
- 2 bell peppers
- 1 (400 g) can chopped tomatoes
- 1 (400 g) can kidney beans
- 3 garlic cloves
- 1 tablespoon tomato puree
- 1 teaspoon cayenne pepper
- 1 teaspoon smoked paprika
- 1 teaspoon cumin powder
- 1 teaspoon dried oregano
- 1 teaspoon dark cocoa
- 1 teaspoon sugar
- 1 teaspoon salt
- 1 tablespoon olive oil
directions
- Mix the dry spices, salt, sugar and cocoa in a little bowl and set to one side.
- In a non stick pot, Use the oil to fry the chopped onion until translucent, then add the mincemeat and fry til browned, stir in the spice mix and chopped garlic and cook for 2 to 3 minutes.
- Drain the kidney beans and add to the pot, add the bell pepper chunks and chopped tomatoes and bring to the boil. Turn heat right down and simmer for around 20 minutes.
