Tortellini & Bacon Meatballs

"This is a variation of a recipe from Better Homes & Gardens. I substituted tortellini for their orecchiette pasta and fire roasted tomatoes for their regular tomatoes."

ingredients

• 12 ounces ground pork
• 4 slices of thick bacon, chopped into little pieces
• 2 minced garlic cloves
• 1⁄2 teaspoon pepper
• 2 tablespoons olive oil
• 19 ounces cheese tortellini
• 2 small shallots, thinly slices
• 2 (14 ounce) cans diced fire-roasted tomatoes
• 2 cups spinach, torn
• shaved parmesan cheese (optional)
• 1⁄2 cup chicken broth

directions

1. Cook tortellini according to directions, set aside.
2. Combine pork, bacon, garlic & pepper. Shape into 1" balls. Brown until crisp and set aside.
3. Retain all grease for meatballs. Cook shallots until tender.
4. Add meatballs, tomatoes, broth, tortellini & salt. Cook until spinach wilted and well blended.
