This drink dates back to the mid-nineteenth century and it is disputed whether it originated in England, America, or Australia. It was originally made with Old Tom, a sweetened gin. The modern version is made with dry gin. A French 75 is a Collins made with cognac and champagne.
Directions:

Mix the first 3 ingredients in a chilled glass; stir.

Add 3-4 ice cubes; top with club soda, stirring gently.

Garnish with lemon slice and cherry.

This is how this drink was meant to be! Unfortunately, not many bartenders know how to make them the right way. Stick with this recipe and you can say goodbye to the Collins mix and hello to a light, refreshing cocktail. I use equal parts lemon and simple syrup.

I love this drink although I substitute the gin with Vodka. Nice tart drink.
