This is a satisfying and healthy sandwich. Put a fresh apple on your plate with it and you're doing yourself good while you put a smile on your face.
- 2 slice whole grain bread or 2 slice multi grain bread
- 29.58 ml hummus
- 3 slice cucumbers
- 2 thin slices red onion rings
- 0 green sweet pepper, sliced
- 2 slice tomatoes, more if tomato is small
- alfalfa sprout
- salt, to taste (optional)
- fresh ground pepper, to taste
- Spread Hummus on bread.
- Arrange sliced vegetables on top.
- Top with alfalfa sprouts.
This is a delicious and healthy sandwich -- one I will make again for sure! I have always loved alfalfa sprouts on veggie sandwiches -- so glad to have another one to use them on. Loved the hummus too and you can find so many combinations of prepared hummus in the grocery store or you can make your own. Made as directed with the exception of the green pepper. I made this sandwich today for my lunch and loved it! Its fresh and healthy with ingredients that I typically have on hand (save for the alfalfa sprouts). I used hummus with roasted pine nuts by Sabra and this was a really good choice for a spread. I am putting this in my keeper file and am sure I will be making this many times throughout the summer. Doubled the recipe for the 2 of us, then followed it right on down, using a nutty, whole grain bread & had a very delicious sandwich, the kind that makes you feel so good about eating something that's really healthy! Definitely a winner! [Made & reviewed in Zaar Stars Tag]
