Texas Homemade BBQ Sauce

ingredients
- 2 tablespoons butter
- 1 small onion, chopped
- 4 cups ketchup (32 oz)
- 2 cups tomato sauce (16 oz)
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon seasoning salt
- 1 teaspoon pepper
- 2 garlic cloves, chopped
- 4 1⁄2 teaspoons sugar
- 1 1⁄2 teaspoons chili powder
- 1 tablespoon Worcestershire sauce
- 1 tablespoon lemon juice (I use fresh)
- 1 jalapeno, finely chopped- adjust to taste
directions
- Saute onion in butter until clear.
- Add garlic and sauté for 1 minute.
- Add all other ingredients and simmer for at least 30 minutes. *I throw the lemon in after I have squeezed the juice out and remove before serving.
- Taste and adjust seasoning as desired.

If you are looking for a real Texas style sauce, this is it. I've never been a fan of the very sweet Kansas City sauces, or the overly vinegary Georgia style sauces. They are okay on pork, but really not good on beef, and they always make me feel a bit of nausea. This sauce has balance and is good on every smoked meat I have tried it on.

I have gotten recipes from this website for the last year and never felt the need to comment. I joined as a member just to say, tomato sauce does not belong in bbq sauce. Take out the tomato sauce and add some vinegar and this recipe wouldn't be too bad. I read several comments on this same recipe (in the larger serving size) and couldn't believe how many people raved about it. I'm Italian and know when tomato's should not be! I lived in Georgia for almost ten years and I know good bbq sauce. This is not it!
