Sweet Potato Casserole

"Great for holidays--sweet, but hits the spot"

• Serves: 2-4

ingredients

• 2 cups sweet potatoes
• 2⁄3 cup evaporated milk (Pet brand preferred)
• 1 cup sugar
• 1 (16 ounce) can coconut
• 1 teaspoon vanilla

• Topping

• 1 (16 ounce) can crushed pineapple
• 1 cup sugar
• 1 (8 ounce) bottle cherries
• 2 tablespoons cornstarch

directions

1. Beat sweet potatoes with mixer; add remaining ingredients and mix well. Pour in backing dish and bake at 350 degrees for 30 minutes.
2. Toppings: Cook together until thick. Put on top of cooked sweet potatoes and cook 10 minutes more in oven.
