- 2 cups all-purpose flour (plus additional for kneading)
- 2 tablespoons brown sugar
- 3 teaspoons baking powder
- 1⁄4 teaspoon baking soda
- 1⁄4 teaspoon nutmeg
- 1⁄4 teaspoon cinnamon
- 1⁄8 teaspoon ground cloves
- 1⁄2 teaspoon salt
- 1⁄4 cup butter (cold and cut into small cubes)
- 1⁄2 cup vegetable shortening (like Crisco)
- 3⁄4 cup buttermilk, chilled
- 1 sweet potato (large sized, baked, peeled and mashed)
- 2 tablespoons butter, melted
directions
- Preaheat oven to 400 degrees.
- Sift flour, brown sugar, baking powder, baking soda, nutmeg, cinnamon, cloves and salt in a large mixing bowl.
- Cut the butter and shortening into the flour mixture until it looks like coarse meal.
- In a small mixing bowl, mix the buttermilk and sweet potato together, then stir into the flour mixture until combined well. (It will be wet.).
- Turn dough out onto well-floured surface and knead until it comes together, about 3-5 minutes.
- Roll out to about a 1/2 inch thickness and cut with a 2-inch biscuit cutter. Place in parchment lined pan.
- Bake for 10-12 minutes until golden brown, and while still hot brush with melted butter.
