This soup can be made up to 2 days in advance and frozen for up to 2 months. Add more stock when reheating.

  1. In a saucepan, sprayed with cooking spray, heat oil over medium heat; cook onions and garlic for 5 minutes until onions are soft. Stir in remaining ingredients. Bring to a boil. Reduce heat to a simmer, cover, and cook for 15 minutes.
  2. In batches, puree the soup in a blender until smooth. Serve garnished with a dollop of sour cream.
