  1. Heat oil in a wok.
  2. Add the curry paste.
  3. Stir-fry for a minute.
  4. Add beef.
  5. Stir-fry, tossing the mixture continuously until lightly brown.
  6. Add coconut milk, water and chicken stock cubes.
  7. Bring to a boil.
  8. Simmer uncovered for 15 minutes.
  9. Add baby corn and peas.
  10. Cook for 5 minutes.
  11. Add fish sauce, brown sugar, lime rinds and basil.
  12. Mix well.
  13. Garnish with basil.
  14. Serve hot.
