I kind of threw this together one night for a quick supper and what a nice surprise it turned out to be. The whole family loved the spices and gobbled it up. You can adjust the heat to accommodate your tastes. Served it with rice.

  1. Have the butcher cut up the meat into 1 inch cubes or cut it up yourself. Fry the pork in 1 tablespoon of oil over med to high heat until nicely browned, about 15 minutes. Dice up the celery, onion,& green pepper into nice sized pieces.
  2. Add in chopped celery, onion the mushrooms and fry for another 5 - 10 minutes or until soft. Add the rest of the ingredients and bring to a boil for 15 minutes stirring often. Cover and simmer for 20 - 30 minutes or until you can't take the awesome smell anymore -- serve with rice and enjoy.
