I got the basic idea for this recipe on another website but made a lot of changes to reduce the fat content.
- 16 ounces frozen peas
- 12 ounces cream of potato soup
- 1⁄2 cup onion, diced
- 2 cups cheddar cheese
- 1 cup Ritz cracker, crushed
- In a bowl mix peas, soup, and onion. Place in 8 inch casserole dish. Top with cheese and crackers. Bake at 350 degrees for 40 minutes or until cheese is melted and mixture is bubbly.
Yummy! It was so easy to throw together and tasted great too. The crunchy cracker topping was nice. This could easily be made with broccoli or other veggies, I would think. Thanks so much for posting!
This was just delicious! The potato/pea combination is great and the topping is terrific! So easy to make and so tasty - I'll make it often!
