  • 3 slices bacon, cut up
  • 4 cups fresh cleaned spinach leaves
  • 1 cup sliced mushrooms
  • 14 chopped red onion
  • 14 cup unsweetened apple juice concentrate, thawed
  • 13 cup red wine vinegar (or white)

Directions

  1. Add spinach, onions and mushrooms to large bowl, mix.
  2. Fry bacon till crisp. Remove all bacon dripping but 2 tablespoons Add apple juice CONCENTRATE and vinegar, bring to a boil. Pour over salad, mix well, and serve.
