- 3 slices bacon, cut up
- 4 cups fresh cleaned spinach leaves
- 1 cup sliced mushrooms
- 1⁄4 chopped red onion
- 1⁄4 cup unsweetened apple juice concentrate, thawed
- 1⁄3 cup red wine vinegar (or white)
- Add spinach, onions and mushrooms to large bowl, mix.
