Sugar Free Fresh Peach Cobbler

ingredients
- 9 peaches, diced, not peeled
- 8 ounces fresh blueberries
- 1 cup whole wheat pastry flour
- 1 cup sugar substitute (Splenda)
- 1⁄2 - 1 cup butter, cut into 1 tablespoon sections (1 or 2 sticks.)
- 1⁄2 teaspoon cinnamon (optional)
directions
- - Put fruit in bottom of 9x13-inch pan.
- -Mix together flour, Splenda, and butter until it resembles a course meal (cut in with pastry knife or fork).
- -Sprinkle on top of fruit. Because whole wheat pastry flour can be grainier than all purpose, I melted 1/2 stick of butter and poured over topping for added moisture.
- -Bake at 350°F for 30 minutes, or as your oven allows.

My husband and I are on a low carb diets, and he was aching for something sweet. He purposely thawed out a bag of unsweetened peaches, supposedly to make a smoothie. But then he didn't want the shake and ever so sweetly asked if I could make him something baked. What a snake! 8 o'clock at night! Geeeezzzz! But lover that I am, I found this recipe and had it mixed up by the time the counter oven was hot. 40 mins later, wah lah, peach cobbler! No ice cream to cool it down, so he had to blow on it real good. He complained at all his effort, I told him, "Don't worry Hon...it gives you good practice for later!" We laughed, and he flirted back, "Scandalous woman!" This recipe was fabulous and finished at breakfast.

The topping after even 40 mins is still just like when I put it in.. only warmer.. grainy .. sprinkled flour cinnamon and butter mix.. not crusty or risen or anything.. just warmer..what is the point of the topping then?? You could really just put some sliced peaches and berries in a bowl with Splenda and cinnamon mix and microwave it.. maybe add graham crackers for crunch afterwards.. very disappointed..
