This is a great way to get kids to eat their veggies! I think I got the idea from an episode of Emeril.

  1. Dice bacon and then saute in large skillet until crispy.
  2. Add veggies and cook through.
  3. Salt and pepper to taste.

So quick and easy and really good flavor from the bacon. I substituted French Cut green beans for the green beans and omitted the lima beans as I'm not a fan of the latter. My other addition was a bit of garlic powder. Hubby had seconds, also. Thanks j--this will be on my "I need a veggie dish quick!" list. Caution: I made this a 2nd time but my DH brought home some " unknown brand sale bacon" and it was sadly different, so, use good bacon!
