  • Cut zucchini in half lengthwise. Scoop out seeds if they are large.
  • Blanch shell 8-10 minutes. Scoop out zucchini, leaving 1/2 inch shell. Chop zucchini that you scooped out.
  • Brown sausage, onion, and chopped zucchini.
  • Add all seasonings, bread crumbs, and cheese.
  • Stuff zucchini shells.
  • Pour sauce over all and bake 30 minutes at 375°F.

  3. Made this tonight. We all loved it. We made fresh batches of homemade pasta sauce today, so once the boats were stuffed (I used ground beef), we topped the meat mixture with the fresh sauce and fresh mozzarella cheese. I also had 1/2 of a giant garden tomato that I didn't want to waste. When the meat mixture was made, I tossed the fresh diced tomato in the mixture. I can't wait to make this again. Thanks.
     
  4. This was awesome. I used pork italian sausage and one large zucchini, made 4 portions. Added a little extra cheese. Will be making this again.
     
  5. Awesome! I made this for supper tonight... My boyfriend and I loved it! What a great alternative to the usual pasta dish. I am not the biggest fan of noodles/rice so this is a keeper! I didn't have mozza or tomato sauce so I used marble cheese and garlic & herb pasta sauce. I omitted the salt since I find italian sausage to be enough on it's own. I also added a few cloves of garlic. Delicious! Next time I'll have to make sure I let it sit for about 5 - 10 minutes after I take it out of the oven. We didn't have the patients so it was a little messy... But that's ok! Thank you :)
