I heard this mentioned on an old Andy Griffith episode and decided to make up my own version of it. I hope some of you enjoy it.

Directions

  1. Cut tops off of tomatoes and hollow out and discard seeds and pulp.
  2. Cut avocado in half lenthwise , remove seed,scoop out flesh and place in a medium bowl.
  3. Add lemon juice, raisins, onion, and bacon (if using) and mix well.
  4. Season with salt and pepper and stuff mixture into hollowed out tomatoes.
