Strawberry Cookies (No-Bake Date Nut Cookie)

  • In a large saucepan, melt butter.
  • Add slightly beaten egg, sugar, coconut, dates and salt.
  • Cook, stirring constantly, until thick.
  • Remove from heat and add vanilla.
  • Add cereal and nuts.
  • Cool slightly.
  • Butter hands and roll a heaping teaspoon into a ball and then add a point to make it into the shape of a strawberry.
  • Immediately roll in red sugar and place on waxed paper (kids can help with this step since the faster you roll them in sugar, the better).
  • When all the cookies are made, add green icing stems (I use decorator tip #349).
  • When stems are firm to the touch, place in candy papers and store in an airtight container.

  3. These are great cookies. We have also been making them since the late 60's early 70's. Recipe came from a family friend who made my mother promise not to give it out. All of my kids loved them and are still a favorite of our family. Very festive at Christmas. I use a leaf tip to make the leaves.
