A couple of our friends have a great love of chilies of any kind, & this dish was made especially for them! I made it just as written & then allowed the 2 of them to prompt me in my rating ~ "OUTSTANDING! FANTASTIC! COULDN'T HAVE DONE IT BETTER MYSELF!" So there you go . . . All the stars I can give you!   1. In a mixing bowl, mix ginger juice, wine, light soya sauce, fine sugar, cornflour, sesame oil and garlic. Marinate the chicken in seasoning for at least 5 minutes.
  2. Put chicken in a shallow dish and add tomatoes, chillies, ginger and spring onions.
  3. Steam for 12-15 minutes or until chicken is tender. Serve hot.
