A very dear friend gave me this recipe years and years ago. It is a simple salad that is wonderful to have in the fridge. Always a hit at picnics.

Directions

  1. Stir together first 4 ingredients in a bowl. Mix rest of ingredients, stir well and pour over vegetables. Allow at least 8 hours to meld.
  2. Will keep in an airtight container in refrigerator for 10 days.

This is a great salad to use up all that summer squash! I made 1/2 the recipe with 2 large squash and subbed red bell pepper for green. This salad has a nice sweetness with a little tanginess from the vinegar. I tried it after 6 hours and it was good! Made for 2011 Football Pool Win, week #7.
