"Simple spinach salad with an awesome dressing"

ingredients

• Dressing

• 3⁄4 cup mayonnaise
• 2 tablespoons honey
• 1 tablespoon lemon juice
• 1 tablespoon poppy seed

• Salad

• 8 cups Baby Spinach
• 1⁄4 lb bacon, cooked crispy and crumbled
• 1 red onion, sliced
• 2 eggs, hardboiled

directions

1. 1. Whisk all of the dressing ingredients together.
2. 2. Mix all of the salad ingredients together.
3. 3. Mix salad with dressing.

In search of a poppyseed heavy recipe, I came across this one which incorporates lovely poppyseeds into a salad. I usually tend to bake with poppyseeds so I was intrigued with a salad. The greens are smashing with poppyseeds and the other ingredients. To make the salad more satisfying I paired it with a fruity sparkling wine from Italy and thoroughly enjoyed the meal.
