Spinach Dip in a Bread Basket

Make sure to squeeze the spinach very dry so the dip isn't watery. Finely chopped spring onions (scallions) are a nice addition if you like them.

Ingredients:

Servings: 6

• 1 cup mayonnaise
• 1 ½ cups light sour cream
• 180 g water chestnuts , drained and chopped
• 40 g sachet onion soup mix
• 1 (300 g) box frozen spinach , thawed & squeezed dry
• 1 loaf , break (round)

Directions:

1. Slice a lid off the top of the bread and scoop out the inside. Tear the inside bits into bite sized pieces.
2. Mix together the remaining ingredients and put into the hollowed out bread.
3. Serve on a plate surrounded by the bread pieces for dipping.

I was after a recipe that a friend had made just like this but this didnt taste the same to me although was very good just a little strong in flavour. I added the green onions to mine and might try adding another half cup of sour cream next time and then it should be perfect. I forgot to take a picture but it looked great! TY Frickers Mum
