- 1 gallon chicken broth
- 1 teaspoon salt
- 1⁄8 teaspoon white pepper
- 1 lb soft tofu, cubes
- 1 cup water chestnut, sliced
- 1⁄2 ounce dried seaweed flakes
- 4 cups Baby Spinach
- 2 stalks green onions, minced
directions
- In a 10 qt stockpot add broth, salt and pepper to taste. Bring to a boil. Add in the tofu, water chestnut and seaweed. Stir and simmer for 2 minutes. Add the spinach and green onion. Stir and adjust seasoning to taste.
