A super-healthy vegan main dish; can also be used as a side dish.
- 4 (15 ounce) cans pinto beans
- 2 cups cooked brown rice
- 4 teaspoons olive oil
- 1 onion
- 3 garlic cloves
- 1⁄2 teaspoon cumin
- 1⁄3 cup salsa, hot
- In medium pot, saute onion and garlic in oil. Add remaining ingredients and cook until heated through.
I scaled this down for my lunch today. I topped with chopped avocado and mango. This was very good and filling. Thanks for posting, chef.
