ingredients
- 1 1⁄2 cups natural bran
- 1 3⁄4 cups buttermilk
- 1 1⁄4 cups whole wheat flour
- 1 teaspoon baking powder
- 1⁄2 teaspoon baking soda
- 2 teaspoons cinnamon
- 1⁄2 cup raisins
- 2 tablespoons orange zest
- 1 egg
- 1⁄4 cup brown sugar, loosely packed
- 1⁄4 cup canola oil
- 2 tablespoons molasses
- 2 tablespoons honey
directions
- Combine bran and buttermilk, let stand while assembling other ingredients.
- In bowl, combine remaining dry ingredients.
- In another bowl, combine egg, brown sugar, honey, molasses and oil.
- Mix well.
- Add bran mixture.
- Add dry ingredients.
- Bake in sprayed muffin tin in 375 degree oven for 20 minutes.
- Best served warm.

These turned out pretty well. Let me state first why I'm giving these 4 stars rather than 5... they are quite good, but I think that the recipe has a little too much liquid in it. The batter was thinner than other bran muffin recipes I've made, but I just put them in the oven like that. I tried to take them out of the oven since they seemed to be cooked through, but they were kind of floppy (as muffins can get when they have too much liquid) and I had to put them back in to firm up some more, but by then the sides got a little dark and they were still a little floppy. The flavor was really good though. I was surprised that these weren't overwhelmingly cinnamony or orangey, but very well balanced. I really liked the flavors that the molasses and honey gave- usually baked goods call for sugar, molasses or honey, but rarely all three. I had enough batter for 12 VERY full muffin tins and got 12 very large muffins. Well balanced flavors and I think good potential for a truly great bran muffins, but I think the buttermilk quantity needs to be reduced a smidge. Thanks!
