- 2 medium onions, thinly sliced
- 1⁄2 cup carrot, chopped
- 1⁄2 cup celery, chopped
- 1⁄2 cup potato, peeled and chopped
- 1 small jalapeno pepper, finely chopped
- 2 (14 1/2 ounce) cans vegetable broth
- 1 (14 1/2 ounce) can stewed tomatoes
- 2 cups water
- 8 ounces dried lentils
- 2 teaspoons chili powder
- 1⁄2 teaspoon dried oregano
- 3 ounces uncooked whole wheat spaghetti, broken
- 1⁄4 cup fresh cilantro, minced
directions
- Spray a large nonstick saucepan with nonstick cooking spray. Add onions, carrot, celery, potato and jalapeno. Cook over medium heat 10 minutes or until vegetables are crisp-tender.
- Add broth, tomatoes, water, lentils, chili powder and oregano. Bring to a boil. Reduce heat; cover and simmer 20-30 minutes or until lentils are tender.
- Add pasta and cook 10 minutes or until tender.
- Ladle soup into bowls; sprinkle with cilantro.

Mmmmm....this is a great recipe! Super, tasty, quick, healthy and very satisfying. I used Penzy's vegetable soup base and left out the pasta because I was serving the soup with bread and it already seemed hardy enough. Perfectly seasoned. I halved the recipe and wish I had made the full batch. Thanks for sharing this keeper recipe!

I only made a half amount of this yummy recipe as it was only for me. First I enjoyed the aroma and then the full flavor of this lovely soup. I loved the pepper and chili powder as well as the lentil and pasta combo. I did let it simmer on a very low heat for an extra 30 mins under a tight fitting lid. Not because it really needed it but just because I had plenty of time to to do so. I can't wait for seconds tomorrow and I already have one serving bagged and in the freezer. :D
