Directions

  1. Preheat oven to 375 F.
  2. Toss together cheese, flour, mustard and cayenne.
  3. Mix in butter.
  4. Knead with your hands to form a dough.
  5. If the dough feels very dry, add a tablespoon of water.
  6. On a floured surface, roll out half the dough to a thickness between 1/8- and 1/4-inch.
  7. Cut into squares.
  8. Place on ungreased cookie sheets and bake 10 to 12 minutes until lightly browned on the bottom.
  9. Remove to a rack to cool.
