Spice Cake With Cardamom-Coffee Icing

This Scandinavian spice cake is a great recipe to serve friends who come over for coffee. Adjust the icing to your liking... Recipe adapted from Savoring the Seasons of the Northern Heartland

  1. To make the cake:
  2. Preheat oven to 350 degrees.
  3. Sift dry ingredients.
  4. In a large bowl, cream butter & sugars; add eggs one at a time; then vanilla, mixing until light and fluffy (about 5 minutes).
  5. Beat in dry ingredients alternating with buttermilk, beginning and ending with flour mixture.
  6. Beat until just smooth, about a minute.
  7. Pour into two 8-inch (or a 13x9) greased and floured pans. Bake for about 30-35 minutes for layers, 35-40 minutes for 13X9 cake, or until cake tester is removed clean.
  8. Remove from oven and cool on racks about 10 minutes. Remove from pans and finish cooling on racks.
  9. To make the icing:
  10. Heat milk and dissolve espresso powder in it, then allow it to cool.
  11. Beat together remaining ingredients, add coffee mixture and continue beating until fluffy.
  12. Ice cake when cool.

Very moist and tasty! The spices in this cake really stand out and the cake just melts in your mouth. The coffee icing is the bomb. I agree with Elmotoo - it ROCKS!

So I made this today for company that is coming over tonight, and I had to sneak a piece...I can't say enough how good this is!! Wow, it knocked me out! Now, I did not have buttermilk, but I improvised and used some sour cream mixed with milk and I imagine it had the same effect, a beautiful moist cake with a delectable icing! Thanks for posting!!

Oh this just ROCKED my world!! 10+ stars!! I must have done something right because this cake is absolutely FANTABULOUS!! It is so perfect & moist & well balanced seasoning-wise. It could not be better. I think it's because of the buttermilk. Now the icing, I was skeptical (I'm not a coffee drinker but I do like coffee ice cream - go figure) but it is excellent! Perfect! I have to say that I didn't follow the icing recipe perfectly...I eyeballed the confectioner's sugar and the vanilla 'spilled,' lol. I added a litte more cardamom because I thought it was a smidge too coffee-ey. Turns out dh really does NOT like cardamom so I get more cake. YIPPEE!! Thanks, Sistah!!
