- 1 large white onion
- 1 medium leek, white and light green part
- 3 green onions
- 2 large shallots
- 4 large garlic cloves
- 2 cups cabbage, sliced about 1/2 medium sized
- 2 large broccoli
- 5 plum tomatoes
- 2 small zucchini
- 2 small yellow squash
- 1⁄4 cup fresh basil, chopped
- 1 1⁄2 teaspoons kosher salt
- 1 1⁄2 teaspoons onion powder
- 1 1⁄2 teaspoons fresh ground pepper
- 1⁄2 cup chicken or 1/2 cup vegetable broth
- 3⁄4 cup pasta sauce
directions
- Slice white onions, shallots and green onions very thin; mince leek and garlic. Slice cabbage, chop all other vegetables into bite sized pieces.
- Season all vegetables with salt, pepper, onion and garlic powder.
- Sauté onions, leeks, shallots and garlic in avocado or basil flavored olive oil.
- Deglaze sautéed onions with broth. Add in order of what needs to cook the least - last. Tomatoes, green pepper, zucchini, squash, broccoli, cabbage. Add pasta sauce.
- Add freshly chopped basil and green onions, just before serving.
- Serve over rice, angel hair or pasta of your choice.
- Use your judgement when measuring and cooking ingredients; I just started pulling vegetables out of the fridge, seasoned them, threw into a wok; ended up with a fantastic dish.
