- 19.71 ml olive oil
- 59.14 ml onion, chopped
- 1 garlic clove, minced
- 396.89 g diced tomatoes
- 4.92 ml salt
- 2.46 ml pepper
- 453.59 g spaghetti
- 709.77 ml eggplants, diced in 3 inch pieces
- 14.79 ml olive oil
- 59.14 ml basil
- 59.14 ml feta cheese
directions
- Saute onion in the 4 teaspoons olive oil.
- Add garlic and saute.
- Add diced tomatoes.
- Simmer 20 minutes.
- Cook spaghetti; drain.
- Fry egg plant in another frying pan in tablespoon oil. Fry 5 minutes.
- Add egg plant to sauce.
- Pour pasta in a bowl.
- Add sauce on top.
- Break up basil.
- Top with feta cheese.
