Soycoli and Ginger Stir-Fry

  • Turn the stove on high and heat a teaspoon of sesame oil in a wok or frying pan. Alternatively, if you are watching your fat intake, you could lightly spray the pan with cooking oil.
  • Fry the onion and tofu for a couple of minutes before adding the mushrooms and mixing in the soy sauce. Allow to cook for 3minutes, stirring often.
  • Add the broccoli florets and pour in the vegetable stock. Stir well and cover. Reduce to medium heat and leave it to cook for a couple of minutes or until the stock has mostly evaporated.
  • Remove the lid, mix in the ginger and continue to cook for 30seconds. Turn off the stove and season to taste.
  • Sprinkle over some sesame seeds and serve immediately.
