Southwest Potato Salad

ingredients
- 2 lbs yukon gold potatoes or 2 lbs red potatoes, cooked and cubed
- 1 red pepper, chopped
- 1 green pepper, chopped
- 2 green onions, chopped
- 1⁄4 cup cilantro

Dressing
- 1 cup mayonnaise
- 1 tablespoon lime juice
- 1 tablespoon Dijon mustard
- 1 teaspoon chili powder
- 1⁄2 teaspoon cumin
- 1⁄4 teaspoon dry mustard
- 1⁄4 teaspoon paprika
- 1⁄8 teaspoon cayenne
- 1⁄8 teaspoon garlic salt
- salt and pepper
directions
- Cook and cube potatoes. Place in large bowl with peppers, green onions and cilantro.
- In seperate bowl mix together all ingredients for the dressing. Toss gently with warm potatoes and place in refrigerator to cool, about 1 hour.

I did take several liberties with some of the ingredient amounts, but nothing major, I thought, & the resulting salad was great! I used just half the amount of both the chili powder & the cumin, & then doubled the amount of green onions since we like them so much! Definitely a new take for us on potato salad, but we did enjoy it! Thanks for sharing the recipe! [Made & reviewed for one of my adopted chefs in this Spring's Pick A Chef event]
