- 14.79 ml olive oil
- 118.29 ml carrot, finely chopped
- 118.29 ml celery, finely chopped
- 118.29 ml onion, finely chopped
- 2 garlic cloves, minced
- 2 (822.13 g) can beef broth, low sodium
- 411.06 g can diced tomatoes, undrained
- 4.92 ml dried basil leaves
- 2.46 ml black pepper
- 236.59 ml ditalini, uncooked
- 538.64 g can cannellini beans, undrained
directions
- In large pan, saute vegetables in oil for approx 10 minutes, until tender. Stir in broth, tomatoes, basil and pepper. Simmer for 15 minutes. Add Ditalini and beans (do not drain). Simmer an additional 15-20 minutes. Serve with parmesan cheese on top.
