  • Preheat oven to 400f degres.
  • Saute onions in oil until trasparent and slightly browned, add spinach and heat just until wilted.
  • Spray an 8 x 8 inch glass dish with veggie spray.
  • Place macaroni on bottom of dish to cover the bottom. Place slices of tomato in one layer over macaroni. Sprinkle salt and pepper to taste. Sprinkle 1/4 cup cheddar over tomatoes; Add onion and spinach mix and spread evenly over. Lay sole pieces in one layer over spinach mix. Season with salt and pepper to taste. Sprinkle the other quarter cup of cheddar cheese over top.
  • Bake for 30 minutes or until fish is cooked through and flaky.

  1. I had some sole in the freezer that I wanted to use up and so I gave this recipe a try, and I'm so glad I did! It was hearty and just perfect for a weeknight dinner. I made it just as directed and I wouldn't change a thing.
     
  2. This dish turned out beautifully! The balance of tastes and textures was nicely done. I particularly liked that there wasn't a lot of pasta-just the right amount. I did not have sole, so I used tilapia and it was delicious(and less expensive). After reading the recipe and the other reviews, I did add some extra seasoning. I used lemon-pepper which went very well with both the spinach and the fish. I will admit that I added mushrooms because we love them and I had them on hand. All that being said, my hubby inhaled this! His idea of high praise for a dish is, "it's okay". He said this was "really good" and that I should definitely make it again. I definitely will! He also liked that he could taste all the different flavors of the ingredients and it wasn't just a mish-mash. Nice job on this one! Thanks!

  3. I was leery of this at first, but I'm so glad I tried it! I followed the suggestions of other members- I only had frozen spinach, so I boiled, drained, and added it to the onions in the pan to dry out a bit too. I didn't have Steak Seasoning, so I put a dash of Cajun Seasoning with the salt and pepper layers. I used Pangasius (a type of catfish). It tasted so wonderful I ate 1 1/2 servings! I think I added a bit more cheese too, but I love cheese.... :)
     
  4. Every bit was gone! Wasn't too sure about this one but it turned out delish. Used penne and extra cheddar, also salt and peppered each layer. A Keeper... Thanks
     
  5. Another amazing recipe from Derf. I couldn't find sole at the grocery store, substituted flounder, and it was excellent. I also used reduced-fat cheddar and was happy with that ingredient change. Based on other reviews, I added a sprinkling of reduced-sodium Montreal Steak Seasoning in addition to the salt/pepper and was very pleased with the results. Very quick recipe to prepare on a week night, yet it has a very pretty presentation. This recipe would be very easy to scale down for 1-2 people. Thanks for a winner!

  1. This recipe is really really good! What a great way to eat fish. My husband and i loved it. I will definately serve this meal again. Since I dod not have all the ingredients, I replaced the spinach with chopped bock chow, added fresh basil leaves, replaced sliced tomatoes with cherry tomatoes and replaced the cheeze with jalapeno havarti and mozzerella.
