- 170.09 g uncooked soba noodles, broken in half (buckwheat noodles)
- 1419.54 ml shredded red cabbage
- 473.18 ml grated carrots
- 177.44 ml thinly sliced green onion, divided
- 226.79 g coarsely chopped cooked shrimp or 226.79 g chicken
- 44.37 ml low sodium soy sauce
- 44.37 ml rice vinegar
- 36.97 ml creamy peanut butter
- 14.79 ml canola oil
- 9.85 ml thai chili paste with garlic
- 29.58 ml chopped dry roasted peanuts
directions
- Cook noodles according to package directions, omitting salt and fat. Drain; rinse with cold water.
- Combine noodles, shredded cabbage, carrot, 1/2 c green onions, and shrimp in a large bowl.
- Combine soy sauce and next 4 ingredients in a small bowl, stir with whisk until blended. Add soy sauce mixture to noodle mixture, tossing gently to coat. Sprinkle with 1/4 c green onions and peanuts.
