- 118.29 ml chopped onion
- 118.29 ml thinly sliced celery
- 304.75 g can reduced-sodium cream of chicken soup
- 236.59 ml chicken broth, low-sodium
- 236.59 ml cooked wild rice
- 236.59 ml sliced carrot, canned drained
- 2 (170.09 g) can premium chunk chicken breasts, in water, drained
- 2.46 ml chili powder
- 2.46 ml ground cumin
- 0.25 ml ground chipotle chile
- 236.59 ml pepper jack cheese, shredded, divided
- 78.78 ml evaporated fat-free canned milk or 78.78 ml heavy cream
- 44.37 ml chopped cilantro
- 1 bunch cilantro, sprigs (to garnish)

- In a large saucepan, heat oil over medium-high heat; add onion and celery. Sauté, stirring occasionally, 8 to 10 minutes or until softened. Stir in soup and broth. Add rice, carrots, chicken, chili powder, cumin, chipotle chile and 3/4 cup cheese; bring to a boil, stirring occasionally. Reduce heat and simmer 10 minutes to blend flavors; stir in evaporated milk and chopped cilantro. Garnish with remaining cheese and cilantro sprigs.
