  • In a stock pot, melt butter and add chopped carrots, onion, celery and garlic. Saute' till onions are caramelized. Add boullion cubes, chilli seasoning and 6 C water. Bring to a boil, add beans and reduce to a simmer. Cover with the lid tilted and simmer for 2-2.5 hrs adding enough water occasionally to keep soupy. Serve with a dallop of sour cream and shredded cheddar, garnish with fresh chives.

I am a truck driver from Illinois and i hate crappy food(like the stuff in most truckstops) I cook alot on my off time and take it with me in the truck. This saves me money and and solves the crappy truckstop food problem. I have a 3 yr old boy that LOVES bbq, that makes me smile. My favorite thing to cook is anything that i can make on my smoker. I think that my family and friends will tell you that i make some of the best BBQ in the county.
