Simple Turkey Pot Pie

  • Preheat oven to 400°F Grease a 9" pie plate and set aside.
  • Heat oil in a skillet over medium heat until shimmering. Add onion and garlic and saute until soft, 3-4 minutes. Add turkey, salt, pepper, and chili powder; saute until turkey is no longer pink, 5-7 minutes. Drain any accumulated fat. Stir in Worcestershire sauce and peas and carrots. Transfer to pie plate.
  • In a bowl, beat eggs and milk. Stir in biscuit mix and Parmesan cheese. Set aside.
  • Sprinkle Cheddar cheese evenly over turkey mixture. Spread biscuit mix over the cheese. Bake in preheated oven 20-25 minutes until golden brown.

I also earned a Masters in Public Health degree in 2013. After a Walt Disney World trip in Dec 2006 where I had to rent an electric scooter because I couldn't manage the walking, I decided to have gastric bypass surgery, which was done Feb 28, 2007. I lost 160 lbs (though I've gained back about 60 of that since). I can't eat as much as I used to, so I want every bite to be extra good!
