Simple Spanish Rice

ingredients
- 2 cups water
- 15 ounces diced tomatoes
- 1 chicken bouillon cube (I like Knorr)
- 1 cup rice (NOT Minute Rice)
directions
- Bring water, tomatoes, and bouillon to a boil. Reduce heat to low and add rice. Cover for 25-30 minutes. DO NOT REMOVE LID!

This was okay, nothing special. I made it pretty much as written: a tiny bit less tomatoes (my can was 14.5 oz.), and a store (Kroger) brand bouillon cube. At 25 minutes, the mixture was still kind of soupy, so I cooked it for the full 30 minutes. Even then, it was still fairly wet, a minus in my book. It tasted pretty mild; I don't know what kind of spices should be added, but something should. Still, it was quick and easy.
