Simmered Chicken Dinner

- 1 1⁄2 cups campbell's ready-to-use chicken broth
- 1⁄2 cup apple juice
- 1 bay leaf (optiional)
- 1⁄2 teaspoon garlic powder
- 1 teaspoon mild paprika
- 4 boneless skinless chicken breasts, halved
- 1 cup uncooked long grain uncooked white rice
- 3 cups fresh cut-up vegetables or 3 cups frozen mixed vegetables
directions
- Heat broth, apple juice, bay leaf, garlic powder, and 1/2 teaspoons paprika to a boil in a large skillet, stirring occasionally. Add chicken; cover and simmer over low heat for 10 minutes. turn chicken over.
- Add rice around chicken. Top with vegetables,. Return to boil; reduce heat to low.
- Simmer, covered, until chicken and rice are fully cooked - about 25 minutes. Remove bay leaf. Sprinkle with remaining paprika, chopped fresh parsley or green onions.

<br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
