Low carb, tasty and easy to make
- 1 lb shrimp
- 2 cups diced tomatoes
- 1 tablespoon olive oil
- 2 garlic cloves
- 4 ounces feta cheese
- 1 spaghetti squash
- Cook spaghetti squash with your preferred method. (Microwaving a squash that has been stabbed with a fork works well).
- Heat oil in pan. Sautee garlic and scallions. Add peeled and deveined shrimp. Cook until just done, add feta cheese.
- Serve over prepared spaghetti squash.
