Shrimp Medallion With Two Cheese Sauce

FOR SHRIMP
- 8 large shrimp or 8 large raw shrimp, cleaned, and cut open in butterfly style
- 2 bacon, slices
- 1⁄2 lime, juice of
- salt and pepper
- 2 teaspoons olive oil

FOR SAUCE
- 2 tablespoons butter
- 1 tablespoon all-purpose flour
- 1 cup milk, scalded
- 25 g grated manchego cheese
- 25 g cream cheese
- salt and pepper
- 3 drops chipotle hot sauce, to taste
- 1 tablespoon finely chopped parsley, to garnish (optional)
directions
- FOR THE MEDALLION.
- Make a spiral with shrimp to form a medallion.
- Wrap around with the 2 bacon strips and secure with toothpicks.
- Season each medaliion with salt, pepper, and lime juice to taste.
- Heat the olive oil on a flat grill or skillet and cook each pattie 4 minutes on each side.
- Just before serving, pour some cheese sauce over it and garnish with the parsley.
- FOR THE SAUCE.
- Melt butter in a skillet, and add the flour.
- Cook for one minute and add the scalded milk.
- Cook until it has thickened some and add the cheeses, and salt and pepper and just a few drops of chipotle sauce.
- Stir continuosly until cheeses melt.
- Serve.
- Garnish with parsley, if desired.
