Shrimp Curry

ingredients
- 2⁄3 cup butter
- 1 cup onion, chopped
- 1 cup green pepper, chopped
- 2 cups sour cream
- 2 cups light sour cream
- 4 teaspoons lemon juice
- 1 teaspoon ginger
- 1 dash chili powder
- 3 tablespoons curry powder
- 1 1⁄2 teaspoons salt
- 3 -4 garlic cloves, minced
- 6 cups shrimp, cooked & de-veined, split lengthwise in half
directions
- Melt butter in skillet- add onion, green pepper & garlic. Cook until tender but not brown. Stir in sour cream, lemon juice & all other seasonings. Add Shrimp, cook over low heat, stirring until thoroughly heated. (Note: Don't let it boil or it will be very thin.) Feeds 4-5 people.
- Serve over Saffron Yellow Rice {(2) 5oz bags}.
